How to make a mummy feel like a masterchef {+a chunky giveaway – congratulations Veronica}

When an email lands in your inbox offering to send groceries to  your door you usually sit up and take notice.  Well, okay let’s be honest its only happened once, but it sure did get my attention!     On I digging a little further it turns out McCormick have introduced a couple of new ways for us to use their herbs and spices while making tea.   Frankly, any help with meal inspiration around here is more than welcome, because I get ‘oh so bored’ cooking the same meals day in and out.  So on that note  let me introduce you to McCormick Recipe Creations and their range of new Recipe Bases made from all natural ingredients.

First up above is the fabulous  basket of goodies that arrived on my doorstep.   Everything  here I needed to make Massaman Beef Curry and Herb Chicken.   (I should tell you I was allowed to select these from a menu and I chose one to make me happy and one to make the kids happy.   Can you guess which one is which?)   I have to tell you  McCormick’s Recipe Creation packs made me feel like I was on  Masterchef.  The little packets contain all the herbs and spices you need for the meal in fully measured  out amounts and the instructions tell you exactly when to put them in.  It makes it so simple you can’t go to  wrong.  And even better it actually feels like you know what you’re doing!!  (Am I accidentally giving away the fact that I’m a very garden variety cook when it comes to things not cake related?)

The herb chicken was delicious!   We all loved it and I’ve had to promise my family I’ll make it again.  Another great thing about the Recipe Creations range is that once you feel confident you can actually just buy the spices in the jars and cook it all by yourself.  Masterchefs eat your heart out!   The Massaman Curry came from the McCormicks Recipe Base range.  Again yummy (hot) but didn’t give me quiet the same Mastercheffy feeling – as the herbs were already mixed.  I do so love something that makes me feel like I know what I’m doing :)

I just had to enter this after today. It was my son’s 3rd birthday today and I decided it would be the last time I would attempt to bake a sponge cake because they normally sink and have a texture like pound cake. BUT….. today I felt like a Mastermummy in the kitchen because the sponge was perfect.

Every weekend I make a vegetable soup with chicken stock. To jazz it up a little I add around 250 grams of minced chicken with tarragon added in teaspoon size balls. My son calls it Roster ball soup as Chicken don’t have —–!

Whenever i cook fried rice ,i like to garnish it with herbs and spices and for my personal touch i like to add chopped nuts while garnishing – all this makes me feel like a masterchef.

If my husband and kids like it and ask for more than a ‘Master Chef’ I am!
I am always trying new ideas out – most of which work (some a complete disaster) but it’s all about trial and error. If you don’t try you will never know what master piece you could have had. As you can see on my blog I have a lot of delicious recipes (majority uses herbs!) Oh geez I love my herbs.

I feel like a masterchef when I cook a roast chook the way that Maggie B dose. That along with roasted spuds, pumpkin, onion, and cherry tomotoes served with a chicken mushroom sauce and some steamed beans is simply delicious!

I am lucky enough to leave on the coast with fresh inseason crayfish available and a husband that loves fishing. We love to entertain and Ifeel like a masterchef when we grill crayfish on the BBQ and serve with my to die for garlic sauce and rice and yummy fresh salads that I grow myself.

The good old reliable Roast Chicken,stuffing with McCormicks seasoning,potatoes dusted with sea salt,carrotts,sweet potatoe,peas,broccolli,the worksOf course covered with a delightful gravy.You cant go wrong,its quick to prepare,the smell of it cooking is devine and everyone smiles and is full to content,isnt that what a master chef wants?

Being an absolutely terrible cook, I rarely make anything of masterchef quality however my slow cooker helps me make meals that are at least tasty! My favourite creation would have to be pea & ham soup (made from a ham hock). There’s nothing like homemade soup to make you fee like a masterchef.

Filled chicken breast with chopped honey roasted cashews, sweet chilli sauce, home made mayonnaise, spinach and parmesan cheese. Rolled and crumbed, fried to crispy coat and finish in oven until succulent. Mmm I know what I’m having for dinner.

Making and Decorating Birthday cakes for my kids….sometimes i can get so creative I surprise myself with the results ! :) So when I recently gave myself a challenge: that was to make a Jam & Cream sponge! It doesn’t sound like much of a challenge but every SPONGE I have ever made in the past was a FLOP-PANCAKE…I could NEVER make a SUCCESSFUL SPONGE- you know, light fluffy and YUMMY. The result of my Challenge was that I actually SUCCEEDED & was Praised! The kids ate the lot. I
had to take a photo of it just so I could prove that I had made it. The secret of my success was I got the right recipe and beat those eggs/sugar for a long time.

My Spicy Moroccan Lamb dish cooked in a Tagine, spicy, fragrant and the Tagine cooks it so delciously tender. I serve it with plain yoghurt and fresh mint. So yummy – my one and only claim to Masterchef-ism!

The meal that makes me feel like a masterchef is my home made soup. It varies every time I make it depending on what is in my fridge. Always amazes me how you can make something so tasty and nutritious out of virtually anything.

I became addicted to a delicious cheesecake at a local cafe. After numerous trips and blows to the bank balance I decided to try and make it myself. I used my taste buds to dictate the ingredients and decided that mars bars and loads of choc chips were hidden in there. I call it ganache topped chunky chocolate cheesecake and every time I make it the inner masterchef shines through.

I love cooking slow cooked Moroccan spiced lamb shanks. It is actually quite a simple dish but gets lots of oooh’s, aaargh’s and compliments from family and friends which makes me feel like a Masterchef!

Whenever I make something with ganache I feel extremely cheffy – it’s not really appropriate because it’s just cream and chocolate melted together, but it sounds so fancy! I love to use it as icing for cupcakes (and my partner loves to eat said cupcakes, he requested them for his birthday).

I learned a recipe when I was at school, called Hells kitchen. It consists of a combination of fridge leftovers all fried up!! My family ask me to cook each dish again, but replication is impossible!! It is one of those dishes which is unique with every serving but only a mention of it’s name never fails to have my family running to the table!!

roasted vegetable lasagne, the time it takes to create this dish, slicing all the vegetables and roasting them all individually, layering with the fresh pasta, homemade sauce and fetta cheese. Topped with creamy cheesy bechamel sauce and freshly grated parmesan cheese. Served with julienne vegetables and home made garlic bread….hours to prepare..minutes to devour!

M-asterchef I do feel,
c-ooking a tender juicy lamb roast meal,

C-hop the herbs and spices to cover,
O-pulent lamb just like my mother,
R-ealiable potatoes, carrots and trombone,
M-eal that I do call my own,
I- love when the vegies go crispy,
C-ook up some gravy to pour sparingly,
K-eenly all eaten by my family too,
S-o there’s not much to clean up w00 h00!!

I love cooking butter chicken. It is a fantastic version with lots of spices and less fat than ordinary butter chicken. Having my husband tell me my meal is “restaurant quality” certainly makes me feel like a masterchef!

Bash a few chicken breasts until quite flat – this is great for purging the day’s strees. Pan fry in some butter and olive oil until golden brown. Throw in about a cup of cream and a few teaspoons of mustard and simmer along with a sprinkling of flour until the cream forms a thick sauce. Serve with lots of vegetables to compensate for the cream’s calories, dress with a dusting of parsely and you have what looks like a gourmet meal you spent hours preparing. It all takes less than half an hour. (The calories I expect will take longer to dissolve but the taste of this dish is worth it.)

I feel like a Masterchef when I make my Curried Zucchini and Prawns served with home made Garlic and Italian herb Potatoes. My family love the the creamy curried prawns, a recipe I made up when I had home grown Zucchini’s. Tasty and so easy to prepare.

I found a recipe for Masala Fish curry in the Winter Coles Magazine. It is absolutely divine and so fragrant. It calls for ground turmeric and coriander to be coated on basa fillets it is then pan fried. After that it is put into a coconut and masala sauce. It is so easy to prepare and the whole family enjoyed it.

I love to cook Lamb Shanks; slowed cooked in red wine and tomato base, filled with carrots, celery, onion and mushrooms, and served with greens on a bed of mash. I think I actually learnt this a couple of years ago whilst watching one of the masterchef episodes. It’s certainly makes guests say ooh and arrrghhh, which is a lovely feeling. i guess thats why it makes me feel like a masterchef, knowing your impressing your guests at the dinner table. Just beautiful really. :-) Thanks for the great comps.

For dinner parties I often make pork loin with spicy plum sauce and cherries that everyone raves over. I will never admit that the sauce comes from a jar. I even make sure that all evidence is removed long before the guests arrive!

Boy, this made me think!
I will settle on my ‘Citrus Marinated Lamb Backstraps, served on vegetable Cous Cous’ The colours are amazing, and it looks great on a plate. The taste is awesome too! I serve it with a little side dish of Toasted Walnuts mixed with Preserved Lemon which adds the acidic touch this dish really needs to cap it off. If you want the recipes, just let me know, as it’s so quick and easy to make.

I enjoy cooking and watching the satisfaction on my family’s faces whilst they eat. One recipe that makes me feel like a “Masterchef” is my Potato Moussaka. Instead of the traditional Eggplant, it’s replaced with potato. Simple meals that the whole family can enjoy and it’s made with a mother’s love :)

I love my salmon with pungent flavours such as onion, shallot, garlic, ginger, horseradish, or sesame. On a special occasion I would add one of these pungent flavours with a creamy base such as cream cheese, yogurt, crème fraîche, or butter!!! Mmmm!!!

Beef Wellington. Not so “fashionable ” these days. But a sweet, juicy fillet of beef, topped with pate de fois and then wrapped in a light puff pastry and baked, always looks tremendous on the plate and tastes like the best gourmet food.

My fill in the flavour chocolate mud cake. I have a mud cake recipe which I have learned to adapt to almost every situation, so far it has been orange, rum and raisin, cherry, cherry and coconut, dark chocolate, milk chocolate and white chocolate.
Each time I make it it is divine and I always think “This is the best version yet”

I’m lousy at desserts but there is an awesome Scrambled Tofu dish that is (if I don’t say so myself…) to die for ! I picked it up from the Who Weekly magazine but have tweaked it a little and it is delish!
Always makes me feel like if I was in front of George, Gary and Matt while my dish was being tasted…they would just look at me and smack their lips in delight :)

I make the most divine New York Cheesecake (I know that is immodest, and nothing really to do with my skills as a cook, just a great recipe and ingredients). Every time I make it for dinner parties or to take to someone’s house, I love watching people’s reaction when they take the first bite. That lipsmacking, eyes rolling back look. I feel like a masterchef whenever I make it and I’m really just average when it comes to most culinary skills!

I have a chocolate cream dessert I make which my in laws fuss over so much, making me feel like a masterchef. When I made it they were in shock as it was a recipe their aunty used to make, but she had passed away 8yrs earlier and no one had known the recipe or made it since.

It’s now the thing I always get asked to make.

Lately I have been doing ‘fancy’ salads for myself, adding seasonings and different vegies to what I normally make and that make me feel masterchefish too.

My Chicken, Tomato & Basil Risotto that my hubby begs me to go & try out on Masterchef with, he believes it will change their mind on the disasters of risotto!

The dish I make that makes me feel like a Masterchef is my Heavenly Chocolate Mousse.
The recipe was given to me by my sister about 10 years ago, and I have since perfected the art of making it.
It has become so popular that I get requests to make it for family functions.
My in-laws, who are sweet tooths, love this dessert, and it is the one thing I make whenever we are invited there for one of my Greek father-in-law’s equally famous and delicious lamb spits.
It is surprisingly simple to make and the result is always divine.
